Is there a way to make queues only visible to me or specific users?

No, the queues for a given Service Project will be visible to all people who have the Service Team Member (or Agent) role for that Service Project.
Why do you want to limit who can see the queues?

Not really looking to limit anything but rather have different filtering options maybe I just need to play around with filters rather than queues.

If you are talking about using the general purpose Issue Search screen, outside of the service project, to create and save filters, yes, those filters can be for your use only simply by not being shared with any other users.
