Wondering if anyone has noticed similar:
Our sprint insights show 100% of tickets in progress, but over 50% of tickets in the current sprint have their status as "Done" and are sitting correctly in the "Done" swimlane - so we essentially completely disregard Jira insights but it would be useful to have it showing correct information.

Swimlanes do not define "done", it's the columns that do it. Are your completed issues all in the "done" column (the last, rightmost, column on your board)?
Insights, like the board, only looks at issues in that column. Once it sees an issue in that column, it looks to the estimate on it that you committed to at the start of the sprint (so if you changed the estimate, you will find the report ignoring that), and you might want to check that you do not have estimates on sub-tasks if you're using them, they will break all the reporting on your sprint.
