My company is interested in creating a separate tab to view only the workflow activity/changes for a ticket. Is it possible have this information in a separate tab, rather than just have the History tab? This would allow us to make approvals a more easy and streamlined process.

There's the "transitions" tab in Jira Suite Utilities, which is included in OnDemand.
If that's not right for you, then it's a good starting point for coding, but you won't be able to deploy anything you write to OnDemand (See https://confluence.atlassian.com/display/AOD/Atlassian+OnDemand+Plugin+Policy )
