Is there a way to remove a single value from a multi field in a post function?

I have a custom field called "Design Ticket Approvals."

I've figured out that I can check any of the options when a ticket transitions through an approval stage, but doing something like this:

Pretty sweet.

Question is, is there any (easy) way to remove a single value from this field if say, copy later gets un-approved? I know I can clear all the checkboxes, but is there any way to clear just one?
