I would like to make a backup once a day in case something catastrophic happens.

One of the options to automate your backups is a third-party backup app, like GitProtect backups for Jira Software, JWM, and JSM. Withe the solution you can easily set up your backup plan, so that in case of a disaster you can restore your data fast using granular recovery, point-in-time restore, recovery to another Jira account, etc. You can learn more about the backup solution on Atlassian Marketplace - GitProtect.io Backups for Jira Cloud.
P.S. The backup solution is free for up to 10 users.

I would suggest one of the Marketplace apps to help with this as they can provide granular restore. That's especially handy for unintentional deletes. You might try a free trial with the Revyzy Back and Restore App for Jira. Full disclosure, I am an advisor for the app.

You can create backups with a free Jira Cloud plan. To do so, navigate to Settings > System and select "Backup manager" from the menu.
