We have introduced a new status called "Feedback". Now I'd like to create a new event which I can assign to the transition. To keep it all tidy, I also want a new email template for this event.
Is this even possible in an OnDemand instance?

With a few modifications, yes, you can create new templates for emails. You follow the guide for amending the existing ones, but create a new .vm file and then there's another file which you can add a reference to which makes Jira recognise the new template.
However, it's code and hence you can't do it in OnDemand.
