I'm looking for a list of what "To Do" "Backlog" "Funnel" mean when using Jira out of the box, is there an official reference?

Jira has a handful of self-explanatory status out-of-the-box. We don't need an explanation of To-do, in-progress, done, closed, new, re-opened and so on.
Backlog and funnel are things your organisation have added, you will need to talk to your people and teams about what they might mean.

I would suggest using Atlassian's agile coach https://www.atlassian.com/agile Several of the terms you referenced have to do with the Agile methodology, like backlog. https://www.atlassian.com/agile/scrum/backlogs This will give you a base understanding of the product and how it relates to the agile methodology. This should help you and your team more effectively use the software.

We do not know what you mean by "full idea".
To my shame, I only really speak English fluently (I can understand some very simple stuff in several other European languages, but can't speak in them) , so when I look at the list of Status in most Jira systems, I tend to find English words that are very clear to English-speakers.
The status names are very clear in English - to-do = to-do, open = open, in progress = in progress, and so on.
Jira lets you set up any status names you want. Your administrators are in charge here, so go ask them. If you have status names that do not make sense, then ask. They may make sense to other parts of the organisation, but if you do not understand them, then they may be a bit too focussed or clunky (and you may get the advice "don't use them, they're for this odd team" and/or "you can do better, what do you need? (and forget the others)"
There are no "standards" for status any more, you can, and should, do what you want.
The only big restriction is that Status have categories - to-do, in-progress, and done. You are not really restricted by that, but you really should look at it when using Jira. You should always be able to put a status into one of the three.
