I seem to be having the same issue. My notification settings have default settings to notify all assignee's/mentioned users etc.
Could it be this same issue?

There was a bounce on your email address and it was probably what was causing the notifications not being delivered:
550: 550 [internal] [oob] The recipient is invalid.
I removed it and it should work now.

I saw that the other user who had this problem where it was fixed it then re-occurred.
Is there something that can be done to stop it re-occurring? is this a problem on my side that I can change or on Atlassian's side?

I'm glad that it's working again!
It's not possible to prevent this issue from happening. The notification is sent by Atlassian, but something on the mail server blocks it from being delivered, so this issue is more related to the mail server than on our side.
