I am wondering how to use labels to separate tasks between 2 boards under the same project. I know it's possible as I have this option for another project, but I am starting a second project with multiple boards.
I would like to use labels which automatically filter the ticket into a specific kanban board, rather than appearing in all of them under the same project name (which is happening now).
How do you configure labels to fall into specific boards?

You can create a separate board filter for each board that incorporates the labels field. Something like:
Project = ABC and labels = 123_456
And
Project = ABC and labels = abc_def

Create a filter with the values you need like above. Be sure to save it and share it.
Then create a new Board based on an existing filter and choose the filter that you just created.

Obviously you put '123_456' as an example, but what do I actually put there? As my other board seems to have a code and not sure where I get this from or what to put for 'labels = ...' in my new board.

It's the actual value of the label that you created that you want the board to be based on
