Is is possible to view the issues in the Done Column by asignee?

Yes, it should be possible depending on how your current board is set up.
Can you currently see the "Done" column? If so, you'll then need to create a swimlane for the assignee's in the project.
Alternatively, I would recommend using a dashboard to view this sort of information. I like to use the 'Two Dimensional Filter Statistics' macro to see this data. You can create a filter for just the 'Done' tickets in your project to display here.

I should have mentioned that we're completely new to Jira, so far we didn't so any changes in the board setup. We have the normal backlog, to-do, in progress and done columns in our board.
1. The Issues on the DONE column disappear for some reason, how can we bring them back? As mentioned we would like to view the issues in the Done Column by asignee?

Let's check the JQL of the board first to see if the JQL is not including the Done status or status category. First if you navigate to the 3 dots ... at the top right of your board, then click Board Settings, under Filter Query (see image 1) check to make sure the JQL is not limiting the tickets in the board. (It should look similar to my set up)
For the swimlane, you'll stay within the Board Settings and navigate to Swimlanes within swimlanes, you'll then set up the JQL queries based on the assignees within the project. (see image 2)
Another way to do this would be quick filters. (see image 3&4)

I would like to mention again, depending on the number of assignee's within the project, I really recommend using a dashboard for this type of visual aid than reviewing this data. It will help keep from constant maintenance of the board if anyone leaves.

Make sure that the 'Done' status is correctly mapped to the 'Done' column. (image below)
