You can't do that the built-in features, but the Label Manager app, for example, will do this. (There may be others, but this one seems rather popular.)
Why is this not possible natively? I can edit categories, why not labels?

As per my knowledge, you can't edit or rename the label in Jira cloud.
Alternatively, you can create new label with updated name and map it to the ticket and remove the old label.

Jira cloud does not allow to rename labels from UI.
you can do a filter containing the old label and using a bulk edit you can change the label to a new one.
That's the only thing you can do from Jira UI (without plugins)
