I would like to consult the server log of a jira instance, in order to check the logs of a plugin that we are testing.
Ho can I acheive that?

You need to contact your windows/Linux admins based on where your jira is installed.
The Tomcat logs are present in <Install directory>logs/catalina.out
Application logs are present in <home directory>/logs/atlassian-jira.log
