I'm creating a dashboard but it's pulling in details from all projects within our organization. How do I create the dashboard for only one project?

Each gadget will need some configurations to display only information of one project.
For example, the gadget 'Activity Streams' can be configured as following:
And the created vs Resolved Chart can be configured as following:
However, for some gadgets, it is not possible to configure by project.
For example, it is not possible to add any filter in the gadget 'Assign to me'. This gadget will display every issue assign to the current user that the user has permission to view.
This can be explained by the general use of dashboard. Dashboards are designed to display gadgets that help you organize your projects, assignments, and achievements in different charts across projects.

A dashboard consists of gadgets that contain filter results and display it in a particular way (graph, table, pie, ...)
If you base the filters used on that one project, your dashboard will only show issues from that project.
You can then share that dashboard with the one, more or all project roles of that project.

As David said, dashboard is based on your filter, Please create the filter with your project name only and that will represent the data according to your project.
