How to Customize Renditions in Alfresco Docker 7.2

Today I have an Alfresco installation with docker-compose.yml and it generates an overload when I upload large xlsx files.

I would like to change the renderer or transformation configuration parameters that generate an exception due to document time out or mimetype.

Following the documentation and changing configuration lines in alfresco-global.properties it does not take effect from these new configurations and continues to generate a child node of the document renderer (I visualize this child node through the Node Browser).
