I'm wanting to list all Sprints along with their end dates and capacities. How can I access this information?

Do you mean you want to pull this from the Database? Sprint information can be found in the AO_60DB71_SPRINT table. You may find the Jira database schema useful: https://developer.atlassian.com/server/jira/platform/attachments/jira-7-9-2-database-schema.pdf
