In JWM, the statuses do map to your board columns automatically. This is intentional as JWM is meant to allow users to quickly stand up a project and start using it - especially if they do not need all of the bells and whistles that other Jira products have.
If you wanted to change the name of the board column, you would need to change the status of the workflow that is associated to the project. You can modify the workflow if you are a Jira admin or higher by going to "Project Settings > Workflows" and then selecting the pencil icon.
For JWM, each status in the workflow maps to a single column on the JWM board, you wouldn't be able to map multiple workflow statuses to a single column on a JWM board. You can do something like that with Jira Software though.
