I want to use the same or similar set up for a new project as an already designed project. How do I discover which project template was used to set up the current project?

Jira does not store information about the source project template used for creation of a project, so there is no method to get that information.
If you want a new Company Managed project to have the exact same configuration as an existing Company Managed project, and keep the two project configurations in synch, then you can create the new project to share the configuration as the existing project.
If you want a new Company Managed project to have a configuration like another existing Company Managed project then you would need to make copies of the existing project's configuration elements so that you can use and modify the copies with the new project.
If you are working with Team Managed projects there is no native method for sharing the configurations between projects.

There is no template field which is visible after creating a project in Jira, you can infer the template by looking at the project type and key features like issue types, workflows, and board setup. Compare these with the templates available in Jira when creating a new project (e.g., Kanban, Scrum, Service Management). You will be able to find it through these!
