How do I define values for custom fields?

I am a novice Jira user and cannot figure out how to define a range of values for custom fields. For instance, if I want an Issue template to have a yes & no option for a field with radio buttons, or to have a pre-defined list of options for a field with a selection list, how do I do this exactly? I can create a custom field, define its type (radio button, selection list, etc.), but do not see how I define the values for these fields.
