I would like to monitor how long a ticket sits in a specific workflow state and want to create a dashboard showing all tickets in that state. In that dashboard, I would also like to see how long the ticket has been sitting in that state.

Also, you can try alternative solution – Time in Status add-on. Gadget feature lets you monitor customized reports from the app on the Jira dashboard. All add-on reports are available in this gadget and you can control time in status data in the Issue List or Chart View.

There is not a native report for that, nor native fields that you can query about how long an issue has been in a particular status.
You could create a solution with custom fields and Automation rules that would update the fields with information about how long issues have been in each status.
There are also multiple third party apps that provide such features. If you go to the Atlassian Marketplace and search for "time in status" that should give you a list that includes some of them.

Our team at OBSS built Timepiece - Time in Status for Jira exactly for this. It is available for Jira Server, Cloud, and Data Center.
Time in Status mainly allows you to see how much time each issue spent on each status or each assignee.
You can combine the time for multiple statuses to get metrics like Issue Age, Cycle Time, Lead Time, Resolution Time etc.
For all numeric report types, you can calculate averages and sums of those durations grouped by the issue fields you select. For example total in-progress time per customer or average resolution time per sprint, week, month, issuetype, request type, etc. The ability to group by parts of dates (year, month, week, day, hour) or sprints is particularly useful here since it allows you to compare different time periods or see the trend.
The app calculates its reports using already existing Jira issue histories so when you install the app, you don't need to add anything to your issue workflows and you can get reports on your past issues as well. It supports both Company-Managed and Team-Managed projects for Jira Cloud.
Time in Status reports can be accessed through its own reporting page, dashboard gadgets, and issue view screen tabs. All these options can provide both calculated data tables and charts.

if you're open to solutions from the Atlassian Marketplace, I think you might like the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. It also comes with a number of so-called smart columns that aren’t natively available, including time in status. This is how it looks in action:
As you can see above, you can easily sort and filter by the time in status, and also use it across JXL's advanced features, such as support for (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting.

If you are open for a mktplace app to get time in status reports, you can take a look at the one we have built.
You can track the time taken in each status for the issues with multiple types of reports, graphs , gadgets, status grouping and lot more. You can also easily group your statuses via our app and find out the total resolution time for each ticket.

This can be easily done with the WIP Aging Chart gadget offered by our Great Gadgets app.
This gadget displays the issues from a filter/board/JQL grouped by their current workflow status or board column by their age (time in that status or column) in form of a scatter-plot diagram. WIP on top of each column/status represents the total items in that status/column. Hovering the mouse over an issue, will give you details about it. You can also set a threshold to easily identify the issues that stay for too long (the ones in red color).
The gadget can also display a Data tab with details about each issue.
