How do I assign number to priority

I am trying to use number instead of arrows 

1 Critical response = Immediately 

2 Urgent response = 24 hoours

3 high response = 48 hours

4 normal response = 3 days

5 low response = 5 days

6 Lowest response = when available

The arrows are icons associated with the priority scheme.

So the bad news is that you can't associate numbers with priority - the closest you can get is to rename (so instead of "high response", you just have "3" in the display).   But you can use your own icons for them.  A lot of places I've worked have swapped the arrows for coloured numbers (Usually 1 Red as the most urgent, and 6 a blue or green)
