I do not want to us sub-tasks or linked issues for this as it can make the board to look overwhelming.

An issue in Jira can only have one assignee at a given point in time. You can change the assignee of an issue to someone else, who then becomes the owner of the issue. But you can't have multiple assignees.
A common workaround to involve multiple people on a issue, is to add an additional user custom field (e.g. collaborators), where you can add additional people. It allows you to track who is involved overall, but that would not change the basic concept that there is only one owner (or assignee) of the issue.

Hi Walter many thanks. If you change the assignees during the phase of the ticket will JIRA still acknowledge that the previous assignee worked on the ticket (dashboard stats)?

Assignee is a single user picker, so only one person can be assigned to an Issue at a time.
If you're not keen to use Sub-tasks, I'd recommend considering:
Just to note though, the custom field won't "behave" like Assignee in every scenario - eg. the Assignee Icons for filtering a board are only for the system field itself.
