How can I change the Environment field to a drop down that I can populate?

When entering in a bug I would like for the submitter to be able to select the evvironment from a drop down that I can populate instead of the default text or wiki fields they offer.  Anyone know how I can go about doing this?

You can add a custom field (field type: Select List) for this.

Then configure your screens, so that you remove the out-of-the-box 'Environment' field and replace it with your custom field.
