I was adding resolution field to my board, but I only can set resolution to certain status (Done, Won't do., etc.) while in one of the old company project we have it changeable after closing as in below screenshot
How can I apply this to my project?
The resolution can only be set on Done type statuses, because it means the issue is resolved or closed or cancelled. The resolution cannot be set on To Do and In Progress status types.
If you want to set resolution on To Do, In Progress statuses you can only achieve it via Post Functions of the workflow.

In this project the Resolution field is not in the edit screen, add the Resolution field to edit screen on the desired project then you can edit resolution on Done (Green) Status

There is no such thing as "Resolution Status" in Jira. Resolution is a field, Status a display of where an issue is in the workflow (although it behaves very much like a field). The two fields have no technical relationship, but most of us build a relationship in the workflows (and Jira defaults the workflows to having such a relationship, and
In general you can not edit the resolution. This is because resolution is never added to an "edit" screen. If you do put it in Edit (or Create), then you end up resolving your issues on create or edit, because the field is always filled in.
I would want to check your company-managed project to make sure it does not make that mistake.

What fields are we talking about here? Status or Resolution (or both, as we humans always want a link)

I meant this one, when I change the task status to done, meaning close the task, the resolution changed to done automatically. but then as you can see using this Dropdown list I can change this as I want to any resolution.
