In the Atlassian documentation it is written that only pgPool-II is supported for DB clustering (https://confluence.atlassian.com/adminjiraserver/supported-platforms-938846830.html).
We planned to setup a Postgres Cluster with Patroni. Has anybody tried running Jira and Confluence Database on such a setup? Why is it unsupported by Atlassian? What has Jira to do with pgPool-II?

A database that is not supported do not means it will not work. You can do some experimentations and decide to use it anyway if it satisfied your requirements. But be aware that in case you face any issue with your application Atlassian will not provide support for it because the database used is not supported by them.

The database which is use would still be PostgreSQL which is supported.

I do not know either. You can ask Atlassian support about that. It's also more manageable for Atlassian to support only few db architecture and not a bunch of them, they support what they test their build on I guess.

We got the answer from Atlassian Support that they have added support for PGpool-II in Jira 9.10. This means that they have tested the compatibility with the product completely and they can provide assistance for setup and fix related bugs.
It doesn’t restrict us from trying different platforms. While they might work with JIRA, they are just not tested with it.
Support will not be able to support with any issue related to Patroni, however, they will still support Jira functionality-related issues.
This question is solved with this answer....we will just try it :-)
