How is possible make visible star and due date in the Gantt chart?

I mean to see start and due date on the graph, but fixed.

I am not sure what gantt chart you are referring to? Since you indicated being on the premium plan, I suppose you refer to the advanced roadmaps plan?

When you are in the timeline view of a plan and click in the calendar area next to an issue, a timeline bar is added, the starting point representing the start date and the end point being the due date.

When you expand the fields section and click on the Fields dropdown, you should be able to search for the desired fields to make them visible:
