I'm using Jira cloud and I'm sure I could previously open an Issue and then manually drag and drop the order of child sub-tasks (in the same way you can re-order a check list).
However, I can't seem to do this anymore - I hover the mouse over the sub-task and the drag and drop thing doesn't appear.
Am I misremembering here?

You are not misremembering. Dragging and dropping sub-tasks did indeed work and testing it just a moment ago in a JSW Company managed project still does work.
As Jira now has several products (JSW, JSM, JWM, JPD) and team managed and company managed project types, I would not entirely be surprised if the behaviour is not the same in all product editions. So I would recommend to have a look at the type of project you are in.
Also, the implementation issue for this feature (implemented back in 2019 from JRACLOUD-24547) also mentions how the feature does not work in child issues to Epics. Also something worth checking.

Hi @Walter Buggenhout I used the drag and drop function very often to change the order of subtasks in order to prioritize.
I've been seeing the sup-tasks in table form for a few days now and can no longer adjust the order. Is there any way to get the old version back?

The drag and drop does not appear when hovering over sub-tasks, if you have chosen to 'Hide Done' in three dot-menu above the list of sub-tasks on an issue.

Yes, that was also the issue on my side.
I was wondering why my colleague could reorder the subtasks but I was not able to.
It was the "Hide Done" checkbox.
