How I can restore it this both deleted tickets?

It's not possible to restore a deleted issue. It's better to restrict delete issue permission so that no user have deleted issue in Jira.

I just want to highlight that restricting permissions is not necessarily a silver bullet, it does mitigate the risk of data loss, but does not eliminate the risk completely.
I am not sure if you have read about the recent "Account Takeover" type attacks, while these are quite prevalent, only a few get reported or talked about, here are a couple of articles on this, which might be of interest.

It is a silver bullet for preventing issue deletion. I'm not sure what your security failures have to do with avoiding deleting issues.

Permissions based prevention of issue deletion will help you prevent accidental issue deletion by users but does not prevent malicious deletions by insiders and outsiders.
The articles I have shared show examples of malicious outsiders who have taken control of your systems (Account Takeovers) and can then create havoc, data deletion is one form of creating chaos.
Having been in the information security space for many years and seen some of the tactics employed by bad actors, enterprises today deploy the strategy of defense in depth. Permissions based controls is one part of the strategy as it does not address all the risk vectors.

removing deletion permissions is a starting point for sure.
What other controls an enterprise brings in next depends on the risk tolerance of the enterprise and the flexibility it wants to give its users.
I have seen a lot of enterprises bring in alternate compensating controls to give more flexibility to end users besides permissions.

If it was deleted, there is no way to restore it.
The things you can do to prevent losing deleted tasks in the future:
- Disable permission for the regular users and allow it to admins only.
- Back up your projects.
- Get the app from the Atlassian Marketplace.

Unfortunately recovering data back now is not possible unless you have a backup app installed.
As others on this thread have highlighted once you delete an issue in the cloud it is gone forever and there is no audit log.
How to mitigate this risk depends on your organizations risk tolerance.
Options at hand (of course there is no perfect solution):

If you are using JSM Assets you have a similar issue at hand for when Asset Objects get deleted. While you plan out your strategy for data resilience, ensure that you are thinking of strategy holistically and your solution is scalable (what ever it may be).

By default, Jira does not track deleted issues and deleted issues are lost forever. To prevent it happening again, you can try Restore Deleted Issues app developed by our team. In order for this app to work, the app must have been installed before the issue is deleted.

Unless you have one of the "track and recover deleted issues" apps installed before you deleted, then you can not get them back
Delete in Jira means delete.
However, you say you "deleted them from the board". Do you mean you changed them in some way that means the board no longer selects them, rather than deleting the issue?

Exactly, I created a KanBan board with swimlanes and created JIRA tickets here.
Is there an old release (version) I might be able to go to to restore the deleted tickets? If so, how do I get there?

Like I have mentioned in my post, there is an app called Rewind that restores the old versions, where you can restore your tickets. Otherwise it is not possible.

I still do not know if you deleted the issues, or just changed them so that they are no longer selected by the board.
If you have deleted them, then no, there's no "old version", unless you had installed one of the "restore deleted issues" apps (like Rewind, as @Nikola Perisic mentions) BEFORE you deleted them.

Natively in Jira, once the issue is deleted, it cannot be recovered. However, there is an app named Rewind that can restore the deleted issues.

Currently, they are having some issues with loading, so I would wait for some time then try again.
I'd recommend to watch their onboarding video which is also on the app page.
