I think my permissions are ok. It's just strange that some date fields allow us to edit a date, while others do not. Both Joe and I were not able to edit the fields circled in the screenshot.

@Sanjen Bariki We'd prefer to use the date fields we selected, but it almost seems like these date fields are missing the function to add dates to them.

@Sanjen Bariki The same field is not editable for any other user and it never was able to be edited before, that I know of.

Could you please check the both field type is Date or text type from system > field >> type field name ..?

Thanks for sharing the screenshot.
As per given screenshot is not valid to check the field type.
Please follow the below step sto check the field type.
Cog Icon >> issues >> custom field >> search field name ( In the second column you will see the field Type ) .
Please search the field name and share the screenshot to check.
