Depends on what you do to "cancel" them. There's a whole load of ways you could handle "cancel", so it's easier to explain how the chart works than guess how you might be doing it.
JIRA looks at the resolution field. When that has a value, an issue is resolved. When it is empty, an issue is not resolved. (JIRA displays unresolved, but it's empty in the database).
The created/resolved chart relies on that flag, looking at when an issue goes from unresolved to resolved.
