Hi,
Our JIRA OnDemand instance was set up in December (https://dni-jira.atlassian.net). The original administrator email seems to be receiving notifications of every event within JIRA - how / where can we stop this from happening? I can't see anywhere in the Administration section where this email address can be changed.
This email address also appears in the Admin > System > Mail > Send Email screen, but it's not editable.
Any assistance would be great!

He is probably added directly into the notification schemes if he is getting mails for every event. See http://confluence.atlassian.com/display/JIRA/Creating+a+Notification+Scheme#CreatingaNotificationScheme-Addinganeventrecipienttoanotificationscheme for details.
The email that you see on 'Send Email' screen is the current logged in user's mail.
