Change of domain and unable use mail handler or reset users email addresses

All our Jira users have recently changed their default email address to a new company domain name.  We can can still use Jira (using our old email addresses) but can't automatically create issues by email using the email handler. I think this is because our 'From' email address is now a different domain.   It's a software project not service desk project by the way.

I'm a Jira system administrator but can't change other users email addresses.  I can't even change my own email address in my profile.  The message is 'Email address is set by your admin' (but I'm an admin!).

I'm afraid I'm still stuck after reviewing similar questions from other users.  It seems like the solution might mean changing the verified domain name?
