Change default notification email for new projects

Hello Communitiy,

I have changed the sender_address for all existing projects to the new customer_defined sender_address -  that's working perfect.

But if I create a new project, it still uses old jira@<our name>.atlassian.net address as default sender_address.

How/where can I change this default ? 

I have already found this place for Confluence, but not for Jira.
