The Description field is a system field and should not be renamed. Instead you could create another custom field of Paragraph type and call it what you want. Then just include the new field on your screen and leave the Description field off.

If you want to change the description that appears for a field for limited issue types you would do that by modifying the description associated with the field in the Field Configuration.

You would need to find the Field Configuration Scheme associated with the project. Review the Field Configuration Scheme to see which Field Configuration is associated with the Epic issue type. If the Epic issue type was not using its own Field Configuration, then you would need to make a copy of the existing Field Configuration and associate it to the Epic issue type in the Field Configuration Scheme.
In the Field Configuration you can find the Description field, edit it, and change the description that appears with the field.
The above applies only to Company Managed projects.
