We'd like for email notification recipients to see emails, but to never actually reply to them. All I've seen is the ability to change the sender.
@Brian Sweet I believe in the project settings on the notifications you can change the email there. This changes the sender and reply to email address. If you put in a email address that check it would make it a no reply email. https://support.atlassian.com/jira-cloud-administration/docs/configure-email-notifications/
