My concern is to perform some custom field update when performed "Undo Transition".

There is no "undo transition" in Jira, so I can't really help you. Can you explain what you mean by "undo transition"?

There is one Plugin "Undo Transition" using this we can change to previous status.

No, the whole point of that app is that you undo everything you did in the transition. It's not there for editing data.
