The Kanban template allows us to see issues under their parent epic...
We can expand or collapse an epic by clicking the little icon to the left of the purple lightning (top left in the screenshot).
However, we only seem to be able to do this to one epic at a time. In Azure DevOps (my previous experience before Jira), we had buttons to expand and collapse all epics in one go...
When you click that, it collapses all epics and changes to "Expand all"
Is there a way of doing this in Jira? With a lot of epics, it becomes a pain doing them one at a time.

Hi @Avrohom Yisroel Silver, if I understand your question correctly you should be able to simply press the minus key "-" to collapse all or expand all, ref:
Press question mark "?" to display all available keyboard shortcusts.

There is better alternatives to the limited Jira boards when it comes about displaying board items. Our Great Gadgets app offers some dashboard gadgets that you might find useful.
Team Wallboard (WBS) gadget displays the items from an agile board. It support swim-lanes by epics and expands all the epics. It has the big advantage that the cards can be compact, so you can see many items at once comparing to Jira's board. The card colors can be customized.
Work Break-Down Chart (WBS) gadget displays the issues from a filter in a tree structure by their hierarchy: Epic > Tasks, Stories > Sub-Tasks along with their status, giving you a quick overview of the work's content and progress.
So if you create a Jira filter that returns the items to be grouped and configure this gadget to use this filter, it will do the grouping for you.
