It is monotonous work customizing the "Issue Types" before creating a new Project. Can we not create a default issue type and save the template so that all new projects we create show up with those specific fields - and in the saved order?
This is my default preference for Tasks, and I am required to edit the issue types EVERY time before creating a new project. How can I set this as a default?

That is because you seem to be using team managed projects. Company managed projects can use a shared configuration, which is exactly what you are referring to.
In terms of administering these different project types, there is a steeper learning curve when it comes to company managed. But they are a better fit to the type of scale you seem to be looking for.

Yes you can do that. Create Template project configured all the required issue types, screens, Workflows, custom fields.
While you create new project select company managed project and shared with configuration ( In dropdown select Template project).
It will use the same configuration such as Issuetype scheme, screen scheme, workflow scheme etc.
