we have an automation rule that will create sub-task issues, my question is, is there a way to code in a Checklist into the sub-tasks we are adding via the rule.

have you considered using third-party checklist apps?
If you would like to try it, I can recommend your Issue Checklist for Jira Free app, which allows you to add checklists to the issues in many different ways, including automation.
If your use case is to add a specific checklist to all sub-task-type issues, there might be an even easier way to do that. Using our app you can create a simple Checklist Template, and set it as the default template. With that configuration, whenever the issue type sub-task is created, the checklist will be added automatically.
There are some more possibilities depending on your requirements.

Thanks Gracjan - ideally I would like different checklists depending on the value of the sub-task's component... would a 3rd party app be able to do this?

It is possible to achieve this in several different ways. The easiest would be to use our feature that allows you to add a Checklist Template to the issue, based on labels.

As @Alex Koxaras _Relational_ has mentioned, Checklists are not supported in Jira out of the box. That being said, there's still an option of using a Jira checklist add-on.
Before you begin you'll need to doublecheck if custom fields are enabled on the instance. You can find the details for setting them up here if you are using Jira Cloud.
After that you'll need to return to the automation rule and for Action - Create Issue, Add "Checklist" custom field from Choose fields to set.
Then add your checklist items to the Checklist field using Markup formatting. You can check a similar case in more details on our Confluence.

Short answer is no. Checklists are not supported out of the box from Jira.
What you could do is to populate the description of the subtasks using bullets and for this to be your checklist.
You may also want to consider looking for an app which is for checklist and to examine possible integration with Jira Automation (a bit difficult, but you don't know..)
