If not what are the Flowchart Types & Templates that JIRA can produce?

Can you provide more information on the problem you are trying to solve and your use case?

What would you anticipate Jira using as the data to product such a diagram?

Jira is an issue/work tracking tool, not really a tool for documenting flow, but if you describe your use case perhaps we can provide better advice.

Yes, it would use data from an requirements to create the diagram.

Have you heard of Mind Mapping? It's a software that breaks requirements down in a process "flowish" format. I don't believe JIRA has a tool like this but just want to make sure so that I can provide an informed answer

You are correct that Jira does not have any native feature like that. I've not researched if there are any third party products in the Atlassian Marketplace that you could add to Jira to support that.
