From what i read, JIRA studio is a cloud base service, not an application that we can install and host on a local server? I'm trying to find a quicker way to install and cofig all the individual application instead of install and config them one by one.

There's no other way* - go through the dragon slayer thing first so you know how to do it.
However I think Atlassian are working towards bring some of the jira studio things to the firewalled editions, like integrated activity streams and searching.

JIRA Studio is specially developed to be hosted by Atlassian, therefore is not possible to have a standalone version of it.
