Can I set the "Assignee" or "Reporter" field to unassigned, anonymous, or guest??

I need to find out if there is a default user within JIRA that is not a logged in user. Thanks!

See http://confluence.atlassian.com/display/JIRA/Creating+an+Unassigned+Issue.

Reporter can be left blank if you make it optional in the field configurations. It will be shown as 'Anonymous' if empty!

Thank you, however, I mean in a import. I need to do an import and a few of the issues being importer were created anonymously, how do I keep them that way, versus them being assigned to the project lead or person who is doing the import?

Yes, I would go with what Nic suggested.

Map the incoming data to a temporary dummy user, then bulk unassigne them after import.
