When I create a JIRA ticket I have several priorities. I would like to keep only 3 of them.
However, the current choice of priorities is the set of priorities for my company.
Is it possible to create a list of priorities specific to a project? Thank you for your help!

Currently it is not possible to create Priority Schemes per project in Jira Cloud using the built-in Priority field. There are two change requests for that here:

One alternative is to use @Gert-Jan van der Pijl 's suggestion.
Another alternative might be a third party app. It looks like Field Behaviours for Jira might help you achieve your requirement. I have never used that app so I am not positive it will do what you need.

For Cloud, I know you can only use the build-in Priority field on company level. What you can consider is creating a custom field called Priority, for which the values you can setup on a per-project basis working with the Context option. For this, logon as Admin, and consult below instructions.

Downsides/Considerations are: The newly created custom field with priority doesn't show the Icons that the build-in priority field has, and users will see two priority-related fields in their reporting.
