We are running JIRA Software v7.8 and Service Desk v3.11.
A big number of issues had recently been updated. In particular, one of the custom fields was edited and we would like to know how and by how this field in all these issues was modified. I cannot see that in the Audit Log of the particular project. Is there an issue-level audit log in JIRA Service Desk where we can trace back all these updates to the issues?

You should be an Agent. Log in to Jira, open the issue in question in the detail issue view and open the History tab. You will see the history for this issue.
