After the update to include Jira Work Management projects was made, the "Hide completed issues" Setting found in Configure Board > General is now gone and issues older than 2 weeks are once again displaying in Boards.
Was this intentional, and are teams now expected to update their Board Filter to not include issues with a Done-type status when last edited beyond a certain date?
Or will the "Hide completed issues" Setting make a return at a later date?
I found the difference. KABAN Style Boards have the Sub-Filter and Remove Completed Issues options.
When SCRUM Style Boards, with Sprints & Backlogs, are created, they no longer (?) have the Sub-filter & Remove Completed Issues options. Perhaps Scrum board never did and I hadn't realized it.
This difference between the two board types is not mentioned in the Jira support pages for the 2 board types.

Can you provide a screen image of what you are seeing?
Like @Dave Mathijs I also continue to see the option in Kanban boards for Company Managed Team projects, or Kanban boards created from filters. If your site has been updated to the New Navigation, you may see that the name of the option changed:
The option has never been available for Kanban boards for Team Managed projects. There is still an open change request about that:

Nor was it available for Business/Work Management projects. But a change was recently introduced for Business/Work Management projects to allow hiding completed items.

Based on my years of experience with the Jira product the "Hide Completed" option and the Sub-filter options have never been available in Scrum board configurations. They have only ever been available in the Kanban board configurations.
However I have not specifically used the "Create a Scrum board with sample data" option before. If you saw the options on such a board, that would seem to be a mistake. Neither option really applies to Scrum boards.
The intent of the options is to declutter Kanban boards by enabling hiding of older completed issues and issues associated with released Versions. Otherwise the cards would just build up in the board forever.
In a Scrum board cards displayed in the board are only the ones currently in an Active Sprint, and the "clutter" is reduced by completing sprints which removes the completed sprint's cards from the board.
