I was hoping to be able to add a checklist box to my acceptance criteria list in my Jira tickets. Can somebody help me out if this is possible and if so on how to do this?

Hi @lisa ! Did you consider using Atlassian Marketplace app? I would like to recommend to you our Multiple Checklists for Jira app. You can check it out here.
Multiple Checklists app allows you to add as many To do lists as you need, so besides the acceptance criteria, you may also add a separate list with definition of done as well.
There is no need to type in the checklists each time you create a new task. You can create a template and even automate it, so for example Acceptance Criteria is always added when you create a new Task.
You can also add statuses such as In progress, Blocked, Done to each Checklist item. So, you can easily track your progress. They are customizable too!

My issue is that I want to "freestyle" what I put in for acceptance criteria for separate tickets.
So in the end I am "just" looking for a way to have instead of bullet points a checkmark option. See what is possible in gitlab below:

Please create a checklist field with the required field.
Settings --> Issues --> Custom fields -->
You can provide the custom field name and options as below
Once you added the details, please choose where this field have to be appear
Create Screen / Edit Screen / View Scree of required issue type in the project
Again please visit the below settings
Settings -> Issues -> Custom fields -> Check with the name
by clicking on the "Contexts and Default Values", here you can apply for which issue types and for which projects you required.
