Good day,
I am looking for a way to read and write to the "Checklist for Jira On-the-Fly" application via an external script. I am able to see the last time it was updated, and the number of open and closed items, but not the actual items itself, nor can I modify it.
Is there another API that I should be using to perform these tasks.

I see you are using a marketplace app for checklists.
I see this app has no API option so, no there is no API possibility.
The Jira API is only for JIRA functionality and not APP functionality.
You could reach out to the vendor and see what is possible or if this a feature they can look at.
I did kinda hope there was even a hacky way of doing it as many apps use issue's custom fields and some use comments. I will reach out to the vendor to see if they could implement this feature.

Looking at the app's descriptor - they only create these fields on Jira
Of the monly Checklist last update is not read only but it is a string. So it seems, like @Marc - Devoteam mentioned, the best is to get in touch with the vendor and work with their support team to make this available to you.
Also, due to it being a free app, it might be unlikely that they allow accessing the checklist data programatically/via API as it is hosted on their end (linking issues to the checklist data that they render on Jira).
