We have service desk and some of the SD users reply directly to JIRA@ or person@ xxx.atlassian.net.
Can we gain access to the inbox, or redirect/cc to our own inbox?

You just need to visit this user on the User Management, and add him/her into the proper groups (e.g.: jira-users, developers, etc.)
