I'm trying to add multiple sub tasks with different workflows, but all i see is create subtask and when i go to issue types and add issue type I can't seem to add another sub type task
Take a look at the project type at the bottom left of the project displays - does it say "team managed" or "company managed"?

You will need to be a Jira Administrator, but go to Settings > Issues > Sub-tasks.
