I want to run a Quick filter to show tasks without estimates

That depends on what field you are using for estimation. If for example you use Original Estimate then try the following 

originalEstimate is EMPTY

and, if you are using a Jira work Management project, there is no quick filter concept in them. You would need to switch to a Jira software project.
