since you're asking about Jira Work Management, what capabilities are missing for you in the built-in list view?
For a more spreadsheet-like experience, you'll find solutions in the Atlassian Marketplace. I myself work on an app that might solve your use case very well, JXL for Jira.
JXL is a full-fledged spreadsheet/table view for your issues that allows viewing, inline-editing, sorting, and filtering by all your issue fields (including all custom fields!) much like you’d do in e.g. Excel or Google Sheets. It also comes with a number of advanced features, including support for bulk editing via copy/paste, (configurable) issue hierarchies, issue grouping by any issue field(s), sum-ups, or conditional formatting.

JXL integrates into the project sidebar (or top-bar, in Jira Work Management), so it will be easily discoverable to all your team members. JXL also works in (and across!) projects of all types, not just Jira Work Management.
As said above, there may be other solutions that can help with this, too. You may already know that you can trial any app for free for 1 month, and depending on the size of your size, it may be free forever. So if an app is an option for your, perhaps try a few and see which works best for you.

I'm not sure what you mean by "create fields like columns" here. Fields come out as columns in a lot of places in Jira that display multiple issues.
If, for example, you search for "project = xyz", you'll get the "issue navigator", which displays one row per issue and one column per field. Is that what you're looking for?

The issue navigator is the closest you will get to a spreadsheet-like table.
